Where vegetable oil genuinely wins
Two things, and they are not trivial.
Price. Vegetable oil is roughly a tenth the cost. For a restaurant filling multiple fryers weekly, that is a serious operating difference. We absorb it because we think the food is better; that is a choice with a real number attached.
Neutrality. Sometimes you want a fat that contributes nothing at all. Delicate white fish, certain baked goods, anything where beef flavor would intrude. Vegetable oil is engineered for exactly that and it does the job.
It is also liquid at room temperature, which matters if your tallow is the traditional solid kind. Ours is refined to pour, which removes that advantage — but a tub of solid tallow is genuinely less convenient than a bottle of oil.
Where tallow wins
Stability under sustained heat. This is the big one and it is a matter of chemistry, not preference. Vegetable oil is around 58 percent polyunsaturated fat, and polyunsaturated molecules have multiple double bonds where oxidation occurs. Tallow is about 4 percent polyunsaturated.
Under a fryer running all day, that difference compounds. The vegetable oil breaks down into oxidation products, darkens, thickens, and starts imparting off flavors within days. Tallow holds. This is the property that drives our decision more than anything else.
Flavor. Fat carries flavor, and beef fat carries savory depth. Potatoes fried in tallow taste different from potatoes fried in oil, which is the entire reason people still discuss McDonald's fries from before 1990. The full history is in why people stopped using tallow.
Reusability. Because it degrades slower, tallow survives more rounds of frying. Over time that closes a meaningful part of the price gap.
Processing. Melted and strained versus hexane extraction, alkali neutralization, clay bleaching, and 400°F deodorizing. Whether that matters to you is a personal judgment, but the two processes are not comparable and it is fair to prefer the simpler one.
The health question
We are a restaurant, so here is the responsible version.
Tallow is roughly half saturated fat. Saturated fat was treated as settled harmful in the 1980s and is genuinely contested in current research — several large meta-analyses have failed to find the association that dietary guidelines assumed.
Vegetable oil is high in linoleic acid, an omega-6 fat. It is essential and you need some. The concern is that modern diets run an omega-6 to omega-3 ratio far above historical norms, and that heavily oxidized polyunsaturated fat from repeatedly heated fryer oil is a different exposure from fresh oil in a bottle.
Neither side of this is closed. Anyone claiming certainty in either direction is ahead of the evidence. We go through the actual state of the argument in what are seed oils.

Genuinely unsettled. Tallow is about half saturated fat, and the harm attributed to saturated fat is contested in current research.
