The Best Oil for Deep Frying: Smoke Points and Stability Compared

Ten frying fats compared on smoke point, stability under reuse, flavor and cost, plus frying temperatures by food. Smoke point is not the number that matters most.

The right frying fat comes down to three things: how hot it can get before it breaks down, how well it survives being reused, and what it contributes to the food. Most guides only cover the first one, which is why people end up frying in something technically adequate and wondering why the results are flat.

Smoke point is the floor, not the goal

Smoke point is the temperature at which a fat starts visibly breaking down, throwing off acrid compounds and free radicals. Fry above it and the food tastes bitter and the fat degrades fast.

Deep frying happens between 350 and 375°F. So the minimum requirement is a smoke point comfortably above 375°F. That is a floor to clear, not a number to maximize — a fat with a 520°F smoke point is not meaningfully better at 350°F than one at 400°F.

What matters more, and gets discussed far less, is oxidative stability: how well the fat survives hours at temperature and repeated reuse. That is governed by the fat's saturation profile, not its smoke point.

Note what the smoke point column does not tell you. Soybean oil has a higher smoke point than beef tallow and is substantially worse for sustained frying, because it is highly polyunsaturated and polyunsaturated fats oxidize under heat far faster than saturated and monounsaturated ones.

That gap is the whole reason we fry in tallow. In a commercial fryer running all day, oxidative stability is the variable that determines both food quality and how often you dump the fat.

Picking one

Beef tallow if you want the best result and plan to fry more than occasionally. Best flavor for potatoes and anything savory, excellent stability, and it lasts through many reuses. Traditional and correct for fries specifically — this is what American fast food ran on until 1990, a story we covered in why people stopped using tallow.

Peanut oil if you need neutral and high-heat and are not worried about allergens. This is the standard for turkey frying and it works well.

Lard if you are frying chicken or making pastry. Cheaper than tallow, slightly lower smoke point, milder.

Avocado oil if money is not a consideration and you want maximum headroom. It is genuinely good and genuinely expensive.

Not extra virgin olive oil. Its smoke point is at the bottom of frying range and its flavor compounds are destroyed by the heat you paid for. Use it raw.

Not butter. Milk solids burn at 302°F. Clarified butter or ghee raises that to around 450°F and is fine, but plain butter is not a frying fat.

What we use and sell

If you are deep frying, buy the gallon. You need three inches of depth in the pot, which is roughly a half gallon before you cook anything. It is reusable, so that is a one-time cost.

Making the fat last

Strain after every use, through fine mesh or cheesecloth, while it is still warm and pourable. Store covered, away from light.

Do not let it exceed its smoke point — that single event ages the fat more than several normal fries. Fry in batches so the temperature does not crash when food goes in, and shake off excess batter before it hits the pot, since loose crumbs burn and accelerate breakdown.

Replace it when it darkens noticeably, smells sharp or fishy, foams on heating, or refuses to come back up to temperature.

What is the best oil for deep frying?
Beef tallow for flavor and stability, peanut oil if you need neutral, lard as a cheaper animal-fat option. All three clear the temperature requirement and hold up to reuse better than common vegetable oils.

What oil has the highest smoke point?
Refined avocado oil at roughly 520°F, followed by refined peanut, safflower and soybean around 440 to 450°F. Smoke point alone is a poor selection criterion, since oxidative stability matters more for sustained frying.

Can you deep fry in olive oil?
Extra virgin olive oil sits at about 375°F, the very bottom of frying range, and its flavor compounds degrade at that heat. Refined or light olive oil reaches about 465°F and works, but is expensive for the volume frying requires.

How many times can you reuse frying oil?
Depends on the fat and what you fried. Beef tallow and other saturated fats can go many rounds if strained and stored properly. Polyunsaturated vegetable oils degrade faster. Judge by color, smell and foaming rather than a fixed count.

Is beef tallow better than vegetable oil for frying?
For flavor and stability, yes. Tallow's saturated and monounsaturated profile resists oxidation far better than polyunsaturated vegetable oils, so it survives sustained heat and repeated reuse with less degradation, and it contributes savory flavor that neutral oils cannot.
